How do you determine a generators max ouput? for example if you have constant controlled windspeeds of 50mph and are pre calculating the experiment with a wind turbine of 8 inch diameter blades (3 blades) what is the max output of a turbine that small? at 50mph, or 40mph, and how did you get/calculate your data? thank you for your help...

The parameters that you don't know, you are allowed to assume as long as you state them as assumptions. In your case, you could say:

However, the references use metric units, so you will have to convert appropriately.
