She fought it for about five hours. Finally, after I had gone upstairs to use the restroom, she says "I'm Done!" I went downstairs to check and saw an empty plate. I inquired as to how she ate them and she said "A spoon....I mean, my fingers". I went over to the trash can in the kitchen, lifted the lid, and moved an empty bag that looked suspiciously placed to find a pile of mixed vegetables. Discipline shortly followed, and she is now miserable in her room with a sore behind.

Yet at the ripe old age of seven and a half she saw an opportunity, decided to lie, and made every reasonable seven year old attempt to cover her tracks. How do they learn these bad habits so young?
It's an innate behavior, not a learned one. Even Coco the gorilla does so when Penny her trainer catches her in misbehavior. She sat on a kitchen sink at it broke under her weight. She told Penny through sign language that the assistant (human) did it. The only thing that is learned is how to cover one's tracks better. Teaching a child not to lie can certainly be done. But it takes time and effort and consistency. I don't think your discipline was out of line if it was for the lying and not for not eating the veggies.
